Easy Vegan Chili

I picked up One Pot Vegan from Sabrina Fauda-Rôle, which I've used as inspiration for easy one-pot meals. A quick favorite has been this modified chili recipe:

Ingredients

Makes 4 servings

  • •1 red bell pepper, diced
  • •1 green bell pepper, diced
  • •1/4 cup red lentils
  • •16oz can kidney beans
  • •1/2 package tempeh, crumbled
  • •1 cup vegetable stock
  • •1 cup water
  • •2oz tomato paste
  • •1 tbsp olive oil
  • •1 tbsp chili powder
  • •1/2 tsp smoked paprika
  • •Lime (for serving)
  • •Avocado (for serving)
  • •Coconut yoghurt (for serving)
  • •Hot sauce (for serving)

Steps

  1. 1.Add all ingredients to pot.
  2. 2.Bring pot to boil, simmer for 12-15 minutes.
  3. 3.Serve hot with lime, avocado, coconut yoghurt and hot sauce.

Notes

Oil is optional; add another cup of water for more soup like consistency; add baked sweet potatoes for more nutrients at cost of additional time.
