Easy Quinoa and Veggies

Ah, I had a bolt of inspiration and whipped together this quick and easy, one-pot, fully vegan dish. I've been moving towards whole foods, plant based - with the exception of labor day, 3 for 1 chips deals are hard to pass on.. I've made pastas and stews and curries, which have ranged from bland to delicious, as in this recipe:

Ingredients

Makes 4 servings

  • 1 medium zucchini, sliced into large pieces
  • 1 cup quinoa
  • 16oz can of diced tomatoes
  • 16oz can of black beans
  • 1 cup vegetable stock
  • 1 cup water
  • 1/2 packet taco seasoning
  • 1 tbsp olive oil
  • Lime (for serving)
  • Avocado (for serving)
  • Coconut yoghurt (for serving)
  • Hot sauce (for serving)

Steps

  1. 1.Add zucchini, quinoa, tomatoes, black beans, vegetable stock, water, olive oil and taco seasoning to pot.
  2. 2.Bring pot to boil, simmer for 10-12 minutes, until all water absorbed by quinoa.
  3. 3.Serve hot with lime, avocado, coconut yoghurt and hot sauce.

Notes

Oil is optional; check taco seasoning ingredients for unwelcome guests like sugar.
